地瓜(香酥粒)餐包


这个地瓜包,口感很好,很清淡,搭配表面的香酥粒还真不错吃 :)
面团很快就打出薄膜了,还非常有弹性。
今天有点词穷,呃。。。。





地瓜餐包(来自快乐手作面包)  
我做了以下的双倍分量

中种:
即溶酵母粉 2.5g、水90g、高筋粉 150g

1. 酵母粉溶于水再加入高筋粉揉成团(成团就可以了),室温发至 4~5倍。(我用了2小时)

主面团:
高筋粉 100g、地瓜泥75g、黄砂糖20g、盐3/4小匙、
奶粉10g、蛋25g、水30g、黄油20g

1. 将发好的中种面团与主面团(除了黄油)揉至表面光滑,加入黄油揉至扩展阶段,松弛40分钟。

2. 分割至所需要的分量与大小,滚圆后排入涂过油的模具,后发至双倍大。

3.  预热烤箱200°C (我的烤箱温度),表面刷蛋液,撒上香酥粒,中层,烘烤20分钟至金黄。

香酥粒:
无盐奶油30g、细砂糖30g、低筋粉70g

1. 奶油软化后打软加入细砂糖搅匀。

2. 加入过筛的低筋粉拌匀后用手搓成小粒。

3. 用不完的香酥粒需要冷冻保存。

 一次过打了双份面团,一半做成了我很喜欢的排包,有14条,经过一夜就只剩这4条 ^^

  14. I love all the photos that you took, esp the 2nd one which you I can see clearly the crumbs on your breautiful sweet potato rolls. "Sifu" always made "sifu" standard of bread, hahaha! Bernice, can I asked you something not related to bread. You know this piece of cloth that you used, I saw it from etsy & I actually wanted to buy it. If you recall my latest bread post, I also used a piece of cloth there. I bought that with 2 other pieces of cloth from etsy whereas this piece of cloth was seen from a different supplier which sells a higher price. All things that I bought from etsy was paid in US dollar, quite expensive, that's why I didn't end up buying this. Did you also buy from etsy?
